🥙 Roasted Chicken & Chickpea Power Bowl

Ingredients
- 400 g Chicken breast fillet
- 400 g Chickpeas (canned, drained)
- 300 g Sweet potatoes
- 2 Teelöffel Paprika powder (sweet)
- 1 Teelöffel Cumin (ground)
- 3 Esslöffel Olive oil
- 1 Stück Lemon
- 100 g Feta cheese
- 150 g Cucumber
- 150 g Coconut yogurt (unsweetened)
Instructions
- 1. Preheat the oven to 200 degrees Celsius (conventional heat).
- 2. Wash the sweet potatoes and cut them into small cubes. Place them on a baking sheet.
- 3. Cut the chicken breast fillet into bite-sized pieces and place them on the same baking sheet next to the sweet potatoes.
- 4. Dry the chickpeas thoroughly with a kitchen towel.
- 5. Brush everything with olive oil. Sprinkle the chicken and chickpeas with paprika powder and cumin. Season with salt and pepper.
- 6. Place the tray in the oven and bake everything for 25 minutes until golden brown.
- 7. Meanwhile, wash the cucumber and cut it into small cubes.
- 8. Mix the coconut yogurt with the juice of half the lemon and a pinch of salt.
- 9. Crumble the feta cheese roughly.
- 10. Divide the warm mixture of chicken, chickpeas, and sweet potatoes among 4 bowls. Top with cucumbers, feta, and the lemon-yogurt sauce.
