🍚 Mushroom risotto

Ingredients
- 200g Risotto rice
- 250g Mushrooms
- 1 Onion
- 1 Garlic clove
- 800ml Vegetable broth
- 2 EL Olive oil
- 50g Parmesan cheese
- einige Blätter Parsley
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Finely chop the onion and garlic.
- 2. Slice the mushrooms.
- 3. Heat olive oil in a large pot and sauté the onion and garlic until translucent.
- 4. Add the mushrooms and sauté for about 5 minutes until soft.
- 5. Add the risotto rice and toast briefly.
- 6. Gradually add the vegetable broth, stirring constantly until the liquid is almost fully absorbed.
- 7. Once the rice is creamy and al dente, stir in the grated Parmesan.
- 8. Season with salt, pepper, and chopped parsley.
- 9. Serve the risotto in bowls.
