  1. 1. Heat the broth in a pot and keep it warm.
  2. 2. Finely chop the onions.
  3. 3. Heat oil and 20g of butter in a large pot and sauté the onions until translucent.
  4. 4. Add the rice and stir for 2 minutes until the grains look slightly translucent.
  5. 5. Deglaze the rice with the white wine and stir until the liquid has evaporated.
  6. 6. Dissolve the saffron in a few spoonfuls of the hot broth.
  7. 7. Add the broth to the rice one ladle at a time and stir regularly. Add the saffron broth after 5 minutes.
  8. 8. Stir the Parmesan and the remaining butter into the finished rice (Mantecatura).
  9. 9. Serve the risotto immediately.
