1. Wash, peel, and slice the rhubarb. In a pot, bring rhubarb, water, and sugar to a boil, cover, and simmer for about 3 minutes until soft.
2. Place the rhubarb on a clean kitchen towel to drain, catching the juice. Once cooled, squeeze the rhubarb well, adding a bit of water if necessary to reach 200 ml, and refrigerate until serving.
3. Wash the lemon in hot water, peel a thin strip of zest with a vegetable peeler, cut it in half, and squeeze out the juice. In a cocktail shaker, combine rhubarb juice with gin, 1 teaspoon of lemon juice, and vanilla sugar, and shake well.
4. Strain the rhubarb cocktail into a cocktail glass, add ice cubes, and garnish with a piece of lemon zest.

Tip: If you get tender pink rhubarb, wash the stalks well but don't peel them – this will give the juice a lovely pink color.
