🍲 Alsatian Onion-Beef Stew

Ingredients
- 600 g Beef shoulder, cubed
- 400 g Onions, sliced into strips
- 150 g Carrots, sliced
- 30 ml Brandy (or Cognac)
- 800 ml Beef broth
- 20 ml Rapeseed oil
- 1 Stück Bay leaf
- 2 Stück Fresh thyme sprigs
- 100 ml Sour cream (10% fat)
- 200 g Bread (e.g., Baguette), toasted
- 100 g Gouda cheese, grated
Instructions
- 1. Heat the oil in a large pot. Fry the beef in batches until browned. Remove it and set aside.
- 2. Cook the onions in the same pot over medium heat for 15 minutes until soft and caramelized. Remove them.
- 3. Return the meat, onions, carrots, bay leaf, and thyme to the pot. Deglaze the pan with the brandy.
- 4. Pour in the beef broth. Bring to a boil, reduce heat, and simmer for 60 minutes until the meat is tender.
- 5. Remove bay leaf and thyme. Stir in the sour cream off the heat. Season with salt and pepper.
- 6. Place the stew in oven-safe bowls. Top each with toasted bread and cheese. Bake in the oven at 200°C for 10 minutes until the cheese melts.
