  1. 1. Heat the oil in a large pot. Fry the beef in batches until browned. Remove it and set aside.
  2. 2. Cook the onions in the same pot over medium heat for 15 minutes until soft and caramelized. Remove them.
  3. 3. Return the meat, onions, carrots, bay leaf, and thyme to the pot. Deglaze the pan with the brandy.
  4. 4. Pour in the beef broth. Bring to a boil, reduce heat, and simmer for 60 minutes until the meat is tender.
  5. 5. Remove bay leaf and thyme. Stir in the sour cream off the heat. Season with salt and pepper.
  6. 6. Place the stew in oven-safe bowls. Top each with toasted bread and cheese. Bake in the oven at 200°C for 10 minutes until the cheese melts.
