  1. 1. Peel the potatoes and slice them thinly.
  2. 2. Cut the onion into thin rings.
  3. 3. Fry the potato slices and onion rings in a large pot with hot oil over medium heat for 10 minutes until soft, without browning them.
  4. 4. Beat the eggs in a large bowl and stir in the paprika and pinch of salt.
  5. 5. Add the drained hot potato-onion mixture to the egg mixture and let it cool for 5 minutes so the potatoes absorb the liquid.
  6. 6. Heat a non-stick pan with a spoonful of oil and pour in the mixture.
  7. 7. Fry the tortilla over medium heat for 4 minutes until the bottom is firm.
  8. 8. Place a large plate over the pan and flip the tortilla.
  9. 9. Return the tortilla to the pan and fry the other side for another 3 minutes.
  10. 10. Invert the finished tortilla onto a plate and cut into cubes.
