Ingredients
- 1 Stück Eggplant
- 1 Stück Zucchini
- 1 Stück Bell Pepper
- 2 Stück Tomatoes
- 1 Stück Onion
- 2 Stück Garlic Cloves
- 3 EL Olive Oil
- 1 TL Thyme
Instructions
- 1. Cut the eggplant, zucchini, and bell pepper into small cubes.
- 2. Finely chop the onion and garlic.
- 3. Heat the olive oil in a large skillet and sauté the onion and garlic for 2-3 minutes.
- 4. Add the eggplant, zucchini, and bell pepper, and cook for an additional 5-7 minutes.
- 5. Dice the tomatoes and add them to the skillet along with the thyme.
- 6. Let everything simmer over medium heat for 10-15 minutes until the vegetables are tender.
- 7. Season with salt and pepper to taste and serve.
