  1. 1. Peel onions and dice finely. Peel garlic and mince.
  2. 2. Wash zucchini, aubergine, and peppers. Cut into bite-sized cubes.
  3. 3. Heat olive oil in a large pot or coated pan. Sauté onions and garlic for 3 minutes until translucent.
  4. 4. Add aubergine and pepper cubes. Fry for 5 minutes while stirring.
  5. 5. Add zucchini and fry for another 3 minutes.
  6. 6. Add crushed tomatoes, thyme, salt, pepper, and sugar. Stir well.
  7. 7. Cover pot with lid. Simmer on low heat for 30 minutes until vegetables are soft but not mushy. Stir occasionally.
  8. 8. Remove from heat. Sprinkle with fresh basil. Serve warm or at room temperature.
