🥘 Rustic Provençal Vegetable Stew

Ingredients
- 2 große Stück (ca. 500 g) Zucchini
- 1 großes Stück (ca. 400 g) Aubergine
- 2 Stück Bell peppers (red and yellow)
- 400 g Tomatoes (canned, crushed)
- 2 große Stück Onions (yellow)
- 4 Stück Garlic cloves
- 4 EL Olive oil (extra virgin)
- 1 Handvoll Fresh basil leaves
- 1/2 TL Thyme (fresh or dried)
- 1 TL Salt
- 0,5 TL Black pepper (ground)
- 1/2 TL Sugar (optional, to balance acidity)
Instructions
- 1. Peel onions and dice finely. Peel garlic and mince.
- 2. Wash zucchini, aubergine, and peppers. Cut into bite-sized cubes.
- 3. Heat olive oil in a large pot or coated pan. Sauté onions and garlic for 3 minutes until translucent.
- 4. Add aubergine and pepper cubes. Fry for 5 minutes while stirring.
- 5. Add zucchini and fry for another 3 minutes.
- 6. Add crushed tomatoes, thyme, salt, pepper, and sugar. Stir well.
- 7. Cover pot with lid. Simmer on low heat for 30 minutes until vegetables are soft but not mushy. Stir occasionally.
- 8. Remove from heat. Sprinkle with fresh basil. Serve warm or at room temperature.
