  1. 1. Rinse the quinoa and cook it according to package instructions for about 15 minutes. Let it cool.
  2. 2. Cube the zucchini, eggplant, and pepper, and dice the onion.
  3. 3. Heat the olive oil in a pan and sauté the onion. Then add the vegetables.
  4. 4. Sauté the vegetables for 10 minutes until soft. Stir in the tomato puree.
  5. 5. Let the sauce simmer for 5 minutes. Season with salt, pepper, and chopped basil.
  6. 6. Divide the cooled quinoa onto 4 bowls.
  7. 7. Place the warm ratatouille over the quinoa.
  8. 8. Crumble the goat cheese over the top and serve immediately or pack for later.
