🥗 Ratatouille Quinoa Bowl with Goat Cheese

Ingredients
- 200 g Quinoa
- 200 g Zucchini
- 200 g Eggplant
- 150 g Red pepper
- 400 ml Passata (tomato puree)
- 1 Stk. Onion
- 200 g Goat cheese (fresh)
- 10 Blatt Basil (fresh)
- 3 EL Olive oil
- 1 Prise Salt and pepper
Instructions
- 1. Rinse the quinoa and cook it according to package instructions for about 15 minutes. Let it cool.
- 2. Cube the zucchini, eggplant, and pepper, and dice the onion.
- 3. Heat the olive oil in a pan and sauté the onion. Then add the vegetables.
- 4. Sauté the vegetables for 10 minutes until soft. Stir in the tomato puree.
- 5. Let the sauce simmer for 5 minutes. Season with salt, pepper, and chopped basil.
- 6. Divide the cooled quinoa onto 4 bowls.
- 7. Place the warm ratatouille over the quinoa.
- 8. Crumble the goat cheese over the top and serve immediately or pack for later.
