🍅 Mini Ratatouille Quiche in Muffin Tin

Ingredients
- 500 g Puff pastry (refrigerated)
- 1 Stk Zucchini
- 1 Stk Red bell pepper
- 1 Stk Onion
- 1 Stk Zucchini
- 150 g Cherry tomatoes
- 150 g Feta cheese (cubed)
- 4 Stk Eggs (Size M)
- 200 ml Milk
- 2 EL Olive oil
- 2 EL Basil (chopped)
- 1 Prise Salt
- 1 Prise Pepper
Instructions
- 1. Preheat the oven to 180 °C (356 °F).
- 2. Dice the zucchini, bell pepper, and onion into small cubes.
- 3. Heat the olive oil in a large pan and sauté the vegetables until soft.
- 4. Remove the pan from the heat and stir in the halved cherry tomatoes and feta.
- 5. Whisk the eggs, milk, and chopped basil in a bowl.
- 6. Cut the puff pastry into small circles that fit into the muffin cups.
- 7. Gently press the dough edges to form small tartlets.
- 8. Fill the pastry cups evenly with the vegetable and feta mixture.
- 9. Carefully pour the egg-milk mixture over the filling.
- 10. Bake the quiches for 20 to 25 minutes until the filling is set and the pastry is golden brown.
