  1. 1. Wash the vegetables. Cut the zucchini, aubergine, and pepper into approx. 2 cm cubes.
  2. 2. Finely chop the onions and sauté them in 1 tbsp olive oil in a large pot until translucent (approx. 3 min).
  3. 3. Add the vegetables and sauté them for 5 minutes, stirring occasionally.
  4. 4. Add the tomatoes, season with salt and pepper. Let the mixture simmer on low heat for 20 minutes.
  5. 5. Fry the feta in the remaining oil in a pan until golden brown (approx. 3 min per side).
  6. 6. Serve the ratatouille with a bunch of fresh basil and the feta cubes on top.
