🍲 Classic Ratatouille with Basil

Ingredients
- 250 g Zucchini
- 250 g Aubergine
- 200 g Red Pepper
- 2 Stück Onions
- 400 g Canned Chopped Tomatoes
- 2 EL Olive Oil
- 1 Handvoll Arugula
- 100 g Feta Cheese (drained)
Instructions
- 1. Wash the vegetables. Cut the zucchini, aubergine, and pepper into approx. 2 cm cubes.
- 2. Finely chop the onions and sauté them in 1 tbsp olive oil in a large pot until translucent (approx. 3 min).
- 3. Add the vegetables and sauté them for 5 minutes, stirring occasionally.
- 4. Add the tomatoes, season with salt and pepper. Let the mixture simmer on low heat for 20 minutes.
- 5. Fry the feta in the remaining oil in a pan until golden brown (approx. 3 min per side).
- 6. Serve the ratatouille with a bunch of fresh basil and the feta cubes on top.
