🍝 Quick Ratatouille Pasta

Ingredients
- 300 g Penne pasta
- 200 g Zucchini (diced)
- 150 g Small eggplant (diced)
- 100 g Red pepper (diced)
- 100 g Onion (diced)
- 40 g Zhug or red pesto sauce
- 20 ml Olive oil
- 5 g Salt
- 2 g Pepper
Instructions
- 1. Bring a pot of salted water to a boil and cook the pasta al dente.
- 2. Meanwhile, heat a pan with olive oil over medium heat.
- 3. Sauté the onions for 2 minutes until translucent.
- 4. Add the diced zucchini, eggplant, and pepper.
- 5. Fry the vegetables for 8 minutes until soft and lightly browned.
- 6. Add the pesto sauce to the vegetables and stir.
- 7. Add the drained pasta to the pan and mix everything well.
- 8. Season with salt and pepper to taste and serve hot.
