  1. 1. Cut zucchini, pepper, and onion into very small cubes.
  2. 2. Sauté the vegetables in the pan with oil over medium heat for 5 minutes until soft.
  3. 3. Whisk the eggs in a bowl with salt and pepper until loose.
  4. 4. Add the sautéed vegetables to the eggs and mix well.
  5. 5. Heat a small non-stick pan with a little oil.
  6. 6. Pour in the egg mixture and cook over medium heat for approx. 3 minutes.
  7. 7. Carefully flip the omelet to cook the other side (2 minutes).
  8. 8. Sprinkle the finished omelet with goat cheese and thyme.
  9. 9. Place the omelet on a plate and serve warm.
