🍲 Nice-style Ratatouille with Pearl Barley

Ingredients
- 250 g Zucchini
- 250 g Aubergine
- 150 g Yellow Bell Pepper
- 2 Stück Onions (large)
- 400 g Tomatoes (peeled, canned)
- 240 g Pearl Barley (pre-cooked, jar)
- 30 ml Olive Oil
- 20 g Fresh Basil
- 2 Stück Garlic Cloves
- 5 g Salt
- 2 g Black Pepper
Instructions
- 1. Wash the zucchini and aubergine and cut them into cubes.
- 2. Cut the yellow bell pepper into cubes and slice the onion into thin strips.
- 3. Heat the olive oil in a large pot and sauté the onions for 3 minutes.
- 4. Add the finely chopped garlic and sauté for 1 minute.
- 5. Add the aubergine, zucchini, and bell pepper to the pot.
- 6. Sauté the vegetables for 10 minutes, stirring occasionally.
- 7. Add the tomatoes and the pearl barley. Stir well.
- 8. Let the mixture simmer uncovered for 15 minutes.
- 9. Season with salt and pepper to taste.
- 10. Tear the basil leaves with your hands and fold them into the finished ratatouille.
