🥘 Nice Bowl with Lentils and Ratatoule-style Vegetables

Ingredients
- 150 g Green lentils
- 200 g Peppers (red and yellow)
- 150 g Eggplant
- 100 g Onion
- 3 Stück Garlic cloves
- 20 g Tomato paste
- 15 ml Balsamic vinegar
- 25 ml Olive oil
- 5 g Fresh rosemary
Instructions
- 1. Cook the green lentils in salted water for approx. 20 minutes until al dente. Drain and cool.
- 2. Dice onion, garlic, peppers, and eggplant into small cubes.
- 3. Sauté the vegetables in a pot with a little oil until soft. Stir in the tomato paste and fry briefly.
- 4. Deglaze the vegetables with a splash of water and simmer for 5 minutes. Season with rosemary, salt, and pepper.
- 5. Mix the cooled lentils with the vegetables and half of the balsamic vinegar.
- 6. Divide into 4 storage boxes. Add the remaining vinegar and a little oil to the bowls before eating.
