  1. 1. Cook the green lentils in salted water for approx. 20 minutes until al dente. Drain and cool.
  2. 2. Dice onion, garlic, peppers, and eggplant into small cubes.
  3. 3. Sauté the vegetables in a pot with a little oil until soft. Stir in the tomato paste and fry briefly.
  4. 4. Deglaze the vegetables with a splash of water and simmer for 5 minutes. Season with rosemary, salt, and pepper.
  5. 5. Mix the cooled lentils with the vegetables and half of the balsamic vinegar.
  6. 6. Divide into 4 storage boxes. Add the remaining vinegar and a little oil to the bowls before eating.
