🍲 Ratatouille Bowl with Grilled Chicken

Ingredients
- 400 g Chicken breast fillet
- 200 g Zucchini
- 200 g Eggplant
- 150 g Red bell pepper
- 100 g Onion
- 400 g Canned tomatoes
- 30 ml Olive oil
- 10 g Fresh herbs (thyme, rosemary)
- 10 g Salt and pepper
Instructions
- 1. Wash and slice chicken breast fillet. Season with salt and pepper.
- 2. Dice zucchini, eggplant, and bell pepper. Finely chop onion.
- 3. Heat olive oil in a pan. Fry chicken strips for about 5 minutes until golden brown. Remove and set aside.
- 4. Sauté onion, zucchini, eggplant, and bell pepper in the same pot for 10 minutes until soft.
- 5. Add tomatoes and fresh herbs. Mix well and simmer on medium heat for 15 minutes.
- 6. Return chicken strips to the pan and heat everything together for 2 minutes.
- 7. Serve in a bowl and garnish with fresh parsley.
