  1. 1. Wash and slice chicken breast fillet. Season with salt and pepper.
  2. 2. Dice zucchini, eggplant, and bell pepper. Finely chop onion.
  3. 3. Heat olive oil in a pan. Fry chicken strips for about 5 minutes until golden brown. Remove and set aside.
  4. 4. Sauté onion, zucchini, eggplant, and bell pepper in the same pot for 10 minutes until soft.
  5. 5. Add tomatoes and fresh herbs. Mix well and simmer on medium heat for 15 minutes.
  6. 6. Return chicken strips to the pan and heat everything together for 2 minutes.
  7. 7. Serve in a bowl and garnish with fresh parsley.
