Ingredients
- 1 mittelgroße zucchini
- 1 Eggplant
- 1 Bell pepper
- 2 Tomatoes
- 1 Onion
- 2 Garlic cloves
- 3 EL Olive oil
- 5 Blätter Basil
- 1 TL Thyme
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Dice the vegetables and set aside.
- 2. Heat olive oil in a large pan.
- 3. Sauté onion and garlic until translucent.
- 4. Add zucchini, eggplant, and bell pepper, and sauté for 5 minutes.
- 5. Add tomatoes and herbs, season with salt and pepper.
- 6. Let simmer on low heat for 20 minutes.
