Ingredients
- 150 g quinoa
- 200 g chickpeas
- 1 Stück avocado
- 2 Stück tomatoes
- 2 EL lemon juice
- 2 EL olive oil
- eine Handvoll fresh mint
- 1 Prise salt and pepper
Instructions
- 1. Cook the quinoa according to instructions.
- 2. Dice the avocado and tomatoes into small pieces.
- 3. Combine cooked quinoa with chickpeas, avocado, and tomatoes.
- 4. Add lemon juice, olive oil, salt, and pepper.
- 5. Chop the mint and add it.
- 6. Mix well and serve.
