Ingredients
- 100g Quinoa
- 100g Fresh Spinach
- 200g Chickpeas
- 150g Cherry Tomatoes
- 1 Red Onion
- 2 EL Olive Oil
- 1 EL Lemon Juice
- nach Geschmack Salt
- nach Geschmack Pepper
Instructions
- 1. Rinse quinoa thoroughly and cook according to package instructions.
- 2. In a large bowl, add chickpeas, diced tomatoes, and chopped onion.
- 3. Stir in the cooked quinoa and fresh spinach.
- 4. Drizzle with olive oil and lemon juice, season with salt and pepper.
- 5. Mix everything well and serve.
