1. Wipe the quinces with a clean cloth, remove the blossom end and the stem base, and cut the fruits into eighths. Bring lemon juice together with 1.25 liters of water to a boil, add the quince pieces, and let them simmer gently under a lid for 40 minutes.
2. Let the quinces cool down, let them drain, and press the juice through a cloth to collect it. Measure exactly 1 liter of quince juice, mix it with jam sugar, and boil the mixture for 4 minutes.
3. Skim off the rising foam repeatedly. Fill the jelly into jars that have been rinsed with hot water and seal them well.
