  1. 1. Salt and pepper the veal schnitzels on both sides.
  2. 2. Lightly dust the schnitzels with flour and shake off the excess flour.
  3. 3. Place a slice of Prosciutto and a sage leaf on each schnitzel. Press down lightly.
  4. 4. Heat oil and half of the butter in a large pan over medium-high heat.
  5. 5. Fry the schnitzels for approx. 3 minutes per side until golden brown and cooked through. Remove them from the pan.
  6. 6. Add the remaining butter to the hot pan and let it brown slightly (browning butter).
  7. 7. Pour the butter over the schnitzels and serve immediately.
