  1. 1. Peel the potatoes and cut them into even sticks (fries).
  2. 2. Parboil the potato sticks in salted water for 8 minutes and drain them.
  3. 3. Fry the parboiled potatoes in olive oil in a large pan until golden brown and crispy.
  4. 4. Season the steak with salt and pepper on both sides.
  5. 5. Fry the steak in the same pan (possibly with a little oil) for 3-4 minutes per side for medium doneness.
  6. 6. Let the steak rest for 5 minutes while you prepare the herb butter.
  7. 7. Mix the soft butter with the chopped thyme and place a dollop on the warm steak.
  8. 8. Serve the fries and the steak immediately.
