  1. 1. Cut the chicken breast into bite-sized cubes and lightly salt them.
  2. 2. Dice the onion, zucchini, and bell pepper into small pieces.
  3. 3. Heat the olive oil in a large pot and sear the chicken until golden brown. Remove it from the pot.
  4. 4. Sauté the onion in the same pot for 3 minutes until soft.
  5. 5. Return the chicken, zucchini, bell pepper, and drained tomatoes to the pot.
  6. 6. Pour in the fish stock and sprinkle the herbes de provence. Bring to a boil.
  7. 7. Let the stew simmer on medium heat for 15 minutes until the vegetables are tender-crisp.
  8. 8. Finally season with salt and pepper and serve hot.
