🍲 Quick Provençal Chicken Stew

Ingredients
- 500 g chicken breast
- 150 g zucchini
- 150 g bell pepper (red)
- 400 g tomatoes (canned)
- 1 Stk onion
- 15 ml olive oil
- 200 ml fish stock
- 5 g herbes de provence (dried)
- 5 g salt
- 2 g pepper
Instructions
- 1. Cut the chicken breast into bite-sized cubes and lightly salt them.
- 2. Dice the onion, zucchini, and bell pepper into small pieces.
- 3. Heat the olive oil in a large pot and sear the chicken until golden brown. Remove it from the pot.
- 4. Sauté the onion in the same pot for 3 minutes until soft.
- 5. Return the chicken, zucchini, bell pepper, and drained tomatoes to the pot.
- 6. Pour in the fish stock and sprinkle the herbes de provence. Bring to a boil.
- 7. Let the stew simmer on medium heat for 15 minutes until the vegetables are tender-crisp.
- 8. Finally season with salt and pepper and serve hot.
