  1. 1. Wash the chicken and pat dry with kitchen paper. Slice the breast horizontally into two thin cutlets (optional pounding).
  2. 2. Fry the salami briefly in the hot butter in a pan until crisp. Remove it.
  3. 3. Place a piece of salami and a sage leaf on each chicken cutlet. Fry the meat on both sides in the pan for about 2 minutes per side until golden brown.
  4. 4. Reduce the heat. Stir the mascarpone into the remaining pan sauce until a thick cream forms. Season with paprika powder.
  5. 5. Serve the meat immediately in the sauce.
