🥪 Quick Croque Madame with Herb Butter

Ingredients
- 8 Scheiben White bread (thick slices)
- 200 g Gruyère cheese (grated)
- 8 Scheiben Chantenac ham (or thin cooked ham)
- 200 ml Béchamel sauce (simple store-bought or quick roux)
- 50 g Butter (soft)
- 1 EL Chives (chopped)
- 4 Stück Eggs (Size M)
- 1 Prise Salt and pepper
Instructions
- 1. Preheat the oven to 200 °C top and bottom heat.
- 2. Mix the soft butter with the chopped chives in a small bowl.
- 3. Spread the herb butter evenly on one side of each bread slice.
- 4. Place one ham slice and one cheese slice on the un-buttered side of four bread slices.
- 5. Cover these with the remaining bread slices so that the buttered side faces outward.
- 6. Pour the Béchamel sauce evenly over the sandwiches in an oven-safe dish.
- 7. Bake the sandwiches for 10 minutes in the oven until the cheese melts and turns golden brown.
- 8. Remove the dish. Fry the four eggs in a non-stick pan over medium heat until set.
- 9. Place each fried egg on top of a warm Croque Monsieur.
- 10. Serve the dish immediately while warm.
