  2. 2. Cut the onion and bell pepper into small cubes.
  3. 3. Heat a large pan over medium heat. Add the chorizo slices and fry them until crispy for 3 minutes.
  4. 4. Add the onions and bell pepper and sauté them for 5 minutes.
  5. 5. Stir in the tomato paste and fry it for 1 minute.
  6. 6. Pour in the beef stock and bring the mixture to a boil.
  7. 7. Add the rice noodles, stir, and let everything simmer for 8 minutes until the noodles are cooked through.
  8. 8. Turn off the heat and mix the chopped coriander into the dish.
