🍚 Quick Chorizo Veggie Rice

Ingredients
- 240 g Short rice noodles
- 150 g Raw chorizo sausage (sliced)
- 150 g Onion
- 150 g Red bell pepper
- 500 ml Beef stock
- 20 g Tomato paste
- 10 g Fresh coriander
Instructions
- 1. Rinse the rice noodles under cold water and let them drain.
- 2. Cut the onion and bell pepper into small cubes.
- 3. Heat a large pan over medium heat. Add the chorizo slices and fry them until crispy for 3 minutes.
- 4. Add the onions and bell pepper and sauté them for 5 minutes.
- 5. Stir in the tomato paste and fry it for 1 minute.
- 6. Pour in the beef stock and bring the mixture to a boil.
- 7. Add the rice noodles, stir, and let everything simmer for 8 minutes until the noodles are cooked through.
- 8. Turn off the heat and mix the chopped coriander into the dish.
