  1. 1. Wash the potatoes and cut them into small, uniform cubes (approx. 1 cm). Dice the onion and bell pepper into small cubes as well.
  2. 2. Heat the olive oil in a large skillet over medium heat. Add the chorizo slices and fry for 2 minutes until they release some fat. Remove the sausage from the pan and set aside.
  3. 3. Add the potato cubes to the same pan and fry for 10 minutes until golden brown and tender. Stir occasionally.
  4. 4. Add the onions and bell pepper and cook for another 5 minutes until the vegetables are soft. Add the garlic and paprika powder and cook for 1 more minute.
  5. 5. Return the chorizo to the pan. Mix everything well, season with salt and pepper, and serve immediately while warm.
