  1. 1. Wash the chicken and pat it dry. Place one slice of prosciutto on each fillet and put a sage leaf on top.
  2. 2. Heat a non-stick pan over medium-high heat. Place the chicken pieces with the filling facing down into the hot pan.
  3. 3. Fry the meat for about 4 minutes until golden brown. Gently turn it over and fry the other side for another 4 minutes.
  4. 4. Remove the chicken temporarily from the pan. Add the butter to the still hot pan, foam it slightly and deglaze the pan residues with the white wine.
  5. 5. Pour the sauce over the chicken and serve immediately. Add pepper to taste.
