🥗 Quick Chicken Gazpacho Salad

Ingredients
- 400 g Chicken breast fillet
- 400 g Tomatoes (peeled)
- 1 Stk Cucumber
- 1 Stk Pepper (red)
- 3 Stk Spring onions
- 30 ml Olive oil
- 15 ml Apple cider vinegar
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Wash the chicken fillet and cut it into 2 cm cubes.
- 2. Fry the chicken cubes in a pan with a little oil for approx. 5 minutes until golden brown. Set aside.
- 3. Cut the cucumber, pepper, and spring onions into small cubes.
- 4. Cut the tomatoes into small cubes as well.
- 5. In a large bowl, mix the chicken, vegetables, olive oil, apple cider vinegar, salt, and pepper.
- 6. Let the salad stand for 5 minutes to allow the flavors to meld.
- 7. Serve the salad cold.
