  1. 1. Cut the chicken breast into 4 cm (1.5 inch) cubes.
  2. 2. Cut the onion into cubes of the same size as the chicken.
  3. 3. Prepare the pesto: Blend the basil leaves, parmesan, 2 tbsp olive oil, salt, and pepper in a blender until smooth.
  4. 4. Thread the chicken, onion, and a mozzarella ball alternately onto 4 wooden skewers.
  5. 5. Thread the remaining skewers alternately with cherry tomatoes.
  6. 6. Brush the chicken skewers with the remaining olive oil and fry in a hot skillet for approx. 8 minutes until cooked through, turning them regularly.
  7. 7. Add the tomato skewers to the pan and fry them for the last 2 minutes until they start to swell slightly.
  8. 8. Mix the pesto with the balsamic glaze.
  9. 9. Serve the skewers with the pesto dip on the side.
