  1. 1. Parboil the diced potatoes in salted water for approx. 10 minutes until half-cooked. Drain and dry them.
  2. 2. Cut the meat into approx. 1.5 cm thick strips. Season them with salt and pepper.
  3. 3. Sear the meat strips in a hot pan with half the oil until browned. Remove them and let them rest.
  4. 4. Fry the parboiled potatoes in the same pan with the remaining oil until golden brown. Add the onion rings and sauté them for 2 minutes.
  5. 5. Deglaze the pan with the broth and brandy. Stir the sauce until smooth and return the meat to the pan. Let everything simmer for 2 minutes to blend the flavors.
  6. 6. Serve the meat with the caramelized potatoes and sauce directly on the plate.
