  1. 1. Combine the sugar and water in a small pot. Heat over medium heat until the sugar is dissolved and a clear syrup consistency forms. Let the syrup cool for 5 minutes.
  2. 2. Heat the milk in a small pot or microwave until it is hot but not boiling.
  3. 3. Prepare the espresso and let it cool slightly so it is warm.
  4. 4. Place one scoop of ice cream into each of 4 glasses. Add one teaspoon of the cooled sugar syrup over the ice cream.
  5. 5. Pour the hot espresso slowly over the ice cream, allowing it to melt slightly. Serve the affogato immediately.
