1. In a pot, gently warm the milk. Crumble the yeast and dissolve it with 2 tablespoons of sugar in the warm milk. Cover and let it rise in a warm place for about 15 minutes.
2. In a bowl, combine the yeast milk with butter, flour, 20 g of sugar, salt, an egg, and quark to form a smooth dough. Cover and let it rise again for about 1 hour.
3. Use a tablespoon to scoop portions of dough and shape them into small balls with floured hands.
4. Heat oil in a pot over high heat until bubbles form around a submerged wooden spoon. Fry the quark balls in batches for about 3–4 minutes until golden brown, turning occasionally.
5. Remove with a slotted spoon and drain on paper towels. Mix sugar and vanilla sugar on a plate and coat the quark balls in the mixture.
