🎃 Autumn Pumpkin Tian with Herb Breadcrumbs

Ingredients
- 800 g Pumpkin (e.g., Hokkaido or Butternut)
- 1 Stk Onion
- 2 Stk Garlic cloves
- 30 ml Olive oil
- 40 g Breadcrumbs
- 1 TL Dried thyme
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius top/bottom heat.
- 2. Wash the pumpkin, halve it and remove the flesh with a spoon.
- 3. Cut the pumpkin flesh into slices approx. 5 mm thick.
- 4. Cut the onion into fine cubes and mince the garlic finely.
- 5. Mix the breadcrumbs with half the olive oil, thyme, salt and pepper in a bowl.
- 6. Place the pumpkin slices closely together in a greased baking dish.
- 7. Distribute the onions and garlic evenly over the pumpkin.
- 8. Pour the remaining olive oil over the vegetables.
- 9. Spread the herb breadcrumb mixture evenly over the vegetables.
- 10. Bake the Tian in the oven for 35 to 40 minutes until the pumpkin is soft and the crust is golden brown.
