🐙 Grilled Octopus with Feta and Sun-Dried Tomatoes

Ingredients
- 400 g Octopus rings (pre-cooked)
- 150 g Feta cheese (cubed)
- 80 g Sun-dried tomatoes (in oil)
- 120 g Arugula
- 2 EL Olive oil (extra virgin)
- 1 EL Lemon juice
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Rinse the pre-cooked octopus rings under cold water and dry them thoroughly with kitchen paper.
- 2. Chop the sun-dried tomatoes into small strips. Reserve 1 teaspoon of the oil from the jar.
- 3. Heat a grill pan or non-stick pan over high heat. Grill the octopus rings for approx. 2-3 minutes per side until they have brown grill marks.
- 4. Whisk the reserved tomato oil, fresh olive oil, and lemon juice in a small bowl to make a dressing.
- 5. Place the arugula on a large plate. Arrange the warm octopus rings, feta cubes, and tomato strips on top.
- 6. Drizzle the dressing over the salad, sprinkle with black pepper, and serve immediately.
