  1. 1. Rinse the pre-cooked octopus rings under cold water and dry them thoroughly with kitchen paper.
  2. 2. Chop the sun-dried tomatoes into small strips. Reserve 1 teaspoon of the oil from the jar.
  3. 3. Heat a grill pan or non-stick pan over high heat. Grill the octopus rings for approx. 2-3 minutes per side until they have brown grill marks.
  4. 4. Whisk the reserved tomato oil, fresh olive oil, and lemon juice in a small bowl to make a dressing.
  5. 5. Place the arugula on a large plate. Arrange the warm octopus rings, feta cubes, and tomato strips on top.
  6. 6. Drizzle the dressing over the salad, sprinkle with black pepper, and serve immediately.
