1. Cut the chicken breast into 2 cm cubes. Season with half of the herbs de Provence, salt, and pepper.
2. Dice the onion, pepper, and zucchini into pieces roughly the same size as the chicken.
3. Heat 1 tbsp of olive oil in a large pan. Sauté the chicken cubes over medium-high heat for 5 minutes until golden brown. Remove the meat from the pan and set aside.
4. Add the remaining olive oil to the same pan. Sauté the onions and peppers for 3 minutes.
5. Add the zucchini and sauté everything for another 3 minutes.
6. Add the seared chicken, canned tomatoes, and the remaining herb mix back into the pan. Stir in the beef stock powder. Let the sauce simmer gently for 5 minutes.
7. Cook the couscous according to package instructions with water and salt. Let it sit for 5 minutes to swell.
8. Fluff the couscous with a fork to loosen it.
9. Divide the couscous among 4 serving plates. Top with the chicken-tomato-vegetable mixture.
