  1. 1. Finely chop onion and garlic.
  2. 2. Heat olive oil in a pot. Sauté onion and garlic for 3 minutes.
  3. 3. Add turmeric and roast for 1 minute until fragrant.
  4. 4. Drain chickpeas and add to the pot. Roast together for 2 minutes.
  5. 5. Add tomatoes and coconut milk. Mix well and simmer for 10 minutes.
  6. 6. Add spinach and heat for 2 minutes until wilted.
  7. 7. Serve in a bowl and garnish with fresh parsley.
