🥗 Provencal Chickpea Bowl

Ingredients
- 400 g Chickpeas (cooked)
- 200 ml Coconut milk (can)
- 400 g Canned tomatoes
- 200 g Spinach (fresh)
- 100 g Onion
- 5 g Garlic
- 20 ml Olive oil
- 5 g Turmeric
- 10 g Salt and pepper
Instructions
- 1. Finely chop onion and garlic.
- 2. Heat olive oil in a pot. Sauté onion and garlic for 3 minutes.
- 3. Add turmeric and roast for 1 minute until fragrant.
- 4. Drain chickpeas and add to the pot. Roast together for 2 minutes.
- 5. Add tomatoes and coconut milk. Mix well and simmer for 10 minutes.
- 6. Add spinach and heat for 2 minutes until wilted.
- 7. Serve in a bowl and garnish with fresh parsley.
