🍗 Provence Chicken Bowl with Couscous

Ingredients
- 500 g Chicken Breast Fillet
- 200 g Coarse Couscous
- 2 Stück Onions
- 1 Stück Zucchini
- 250 g Cherry Tomatoes
- 3 EL Olive Oil
- 400 ml Vegetable Broth (hot)
- 2 TL Rosemary (dried)
- 1 Stück Lemon
- 1 Bund Fresh Parsley
Instructions
- 1. Wash the chicken breast and cut it into bite-sized strips.
- 2. Season the meat with salt, pepper, and the dried rosemary.
- 3. Cut the onion and zucchini into cubes. Halve the cherry tomatoes.
- 4. Heat 2 tablespoons of olive oil in a large pan. Fry the chicken on high heat until golden. Remove it and keep it warm.
- 5. Fry the onion and zucchini in the same fat for 5 minutes until soft.
- 6. Add the tomatoes and continue frying for 2 minutes until they soften.
- 7. Remove the pan from the heat. Stir in the couscous and carefully pour the hot vegetable broth over it. Cover the pan and let it steam for 5 minutes.
- 8. Fluff the couscous with a fork. Season with lemon juice and salt.
- 9. Add the chicken and tomatoes to the couscous. Mix everything gently. Garnish with the parsley.
