  1. 1. Wash the chicken breast and cut it into bite-sized strips.
  2. 2. Season the meat with salt, pepper, and the dried rosemary.
  3. 3. Cut the onion and zucchini into cubes. Halve the cherry tomatoes.
  4. 4. Heat 2 tablespoons of olive oil in a large pan. Fry the chicken on high heat until golden. Remove it and keep it warm.
  5. 5. Fry the onion and zucchini in the same fat for 5 minutes until soft.
  6. 6. Add the tomatoes and continue frying for 2 minutes until they soften.
  7. 7. Remove the pan from the heat. Stir in the couscous and carefully pour the hot vegetable broth over it. Cover the pan and let it steam for 5 minutes.
  8. 8. Fluff the couscous with a fork. Season with lemon juice and salt.
  9. 9. Add the chicken and tomatoes to the couscous. Mix everything gently. Garnish with the parsley.
