🍗 Provencal Chicken Grain Bowl

Ingredients
- 400 g Chicken breast (boneless)
- 200 g Whole grain freekeh (spelt-wheat mix)
- 200 g Zucchini
- 200 g Cherry tomatoes
- 50 g Sun-dried tomatoes (in oil)
- 20 ml Balsamic vinegar (aged)
- 30 ml Olive oil
- 40 g Hard cream cheese (parmesan-style)
- 10 g Herbs de Provence (dried)
- 8 g Salt
- 2 g Black pepper
Instructions
- 1. Rinse the whole grain freekeh under cold water and cook it in salted water for 20 minutes until al dente. Drain and let it cool.
- 2. Cut the zucchini into cubes and the chicken breast into bite-sized pieces. Season both with salt, pepper, and half of the herbs de Provence.
- 3. Heat 15 ml of olive oil in a large pan. Fry the chicken on medium heat for 6-7 minutes until golden brown. Remove from the pan.
- 4. Fry the zucchini cubes in the remaining pan fat for 5 minutes until soft. Add the cherry tomatoes and fry for 2 minutes until they start to burst.
- 5. Mix the balsamic vinegar, remaining olive oil, and remaining herbs de Provence in a small bowl. Slice the sun-dried tomatoes into strips.
- 6. Divide the cooled whole grain freekeh among 4 containers. Distribute the chicken, vegetable mixture, and sun-dried tomatoes on top. Crown each container with the cream cheese.
- 7. Pour the dressing mixture over the bowls shortly before serving. Close the lids for meal prep.
