🌶️ Basque Pepper Chicken

Ingredients
- 4 Stk Chicken thighs with bone and skin
- 1 Stk Red bell pepper
- 1 Stk Green bell pepper
- 1 Stk Onion
- 400 g Tomatoes (canned, crushed)
- 2 Zehen Garlic (chopped)
- 2 EL Olive oil
- 1 TL Paprika powder (sweet)
- 1 Prise Thyme or Marjoram
- 1 Prise Salt and pepper
Instructions
- 1. Wash the chicken and pat it dry. Season it generously with salt and pepper.
- 2. Cut all bell peppers and the onion into coarse strips.
- 3. Heat the olive oil in a large casserole dish. Fry the chicken brown on both sides (approx. 10 minutes). Remove it.
- 4. Sauté the onions and pepper strips in the fat for 5 minutes until soft.
- 5. Add the garlic and paprika powder and stir for 1 minute.
- 6. Pour in the tomatoes. Return the chicken to the pot. Cover it.
- 7. Let the dish simmer on medium heat for 25 minutes.
- 8. Remove the lid and let the vegetable cook down for another 10 minutes until the sauce thickens slightly.
- 9. Taste and adjust with salt and pepper. Serve the chicken with the sauce hot.
