🥘 Meat-free Hachis Parmentier with Mushrooms

Ingredients
- 300 g Mushrooms
- 800 g Potatoes
- 200 g Onions
- 100 ml Beef stock (or vegetable broth)
- 20 g Tomato paste
- 30 g Butter
- 100 ml Milk
- 6 g Salt
- 3 g Black pepper
- 60 g Emmental cheese, grated
Instructions
- 1. Boil the peeled potatoes in salted water until tender.
- 2. Dry the potatoes and mash them with the butter and milk to make puree.
- 3. Season the puree with salt and pepper.
- 4. Wash the mushrooms and cut them into cubes.
- 5. Cut the onions finely and sauté them in some oil.
- 6. Add the mushrooms and fry them until golden brown.
- 7. Stir in the tomato paste and deglaze with the stock.
- 8. Simmer the sauce for 10 minutes.
- 9. Fill the mushroom mixture into a baking dish.
- 10. Spread the potato puree smoothly over the top.
- 11. Sprinkle the grated cheese over the top.
- 12. Bake the dish at 200 degrees Celsius for 20 minutes in the oven.
