Ingredients
- 2 Pork Chops
- 4 Garlic Cloves
- 1 Bund Parsley
- 2 EL Olive Oil
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Finely chop the 4 garlic cloves. Tip: Crush them first with the flat of your knife, then chop.
- 2. Wash the bunch of parsley and shake it dry. Wet herbs burn faster.
- 3. Finely chop the parsley. Use only the leaves, the stems are too woody.
- 4. Pat the 2 pork chops dry with paper towels. Wet meat surfaces don't brown well.
- 5. Season the chops with 1 tsp salt and 1 tsp pepper. Rub the seasoning in well.
- 6. Pour 2 tbsp olive oil into a large frying pan (28 cm). Heat it over medium heat (5 out of 9).
- 7. Place the chops in the hot pan. Sear them for 4 minutes, until golden brown.
- 8. Turn the chops. Sear the second side for 4 minutes, until golden brown as well.
- 9. Press the chopped garlic cloves into the pan. Fry them for 1 minute, until fragrant.
- 10. Add the chopped parsley. Stir everything for 30 seconds, until the parsley smells good.
- 11. Remove the chops from the pan and place them on a plate. Let them rest for 5 minutes.
- 12. Pour the pan juices over the chops. This keeps them juicy and allows them to absorb flavour.
- 13. Slice the chops into strips if you like. The meat should be pink inside, not grey.
- 14. Arrange the chops on warm plates. Serve them immediately with the pan sauce.
