  1. 1. Wash the potatoes and cut them into coarse cubes or batons.
  2. 2. Fry the potato pieces in a large pan with the oil over medium heat for approx. 10-12 minutes until golden brown and cooked through.
  3. 3. Remove the potatoes from the pan and keep them warm.
  4. 4. Cut the steak into bite-sized strips and season generously with salt and pepper.
  5. 5. Fry the meat strips in the same pan (without additional oil) over high heat for approx. 3-4 minutes to sear until brown.
  6. 6. Return the potatoes to the pan with the meat and heat them briefly.
  7. 7. Cut the butter into small pieces and add them to the pan.
  8. 8. Add the chives and stir everything until the butter has melted and forms a sauce.
  9. 9. Serve the dish immediately on plates.
