🍆 Pisto Manchego with Whole Wheat Bread

Ingredients
- 200 g Zucchini
- 200 g Eggplant
- 150 g Red bell pepper
- 150 g Onion
- 200 ml Tomato puree
- 30 ml Olive oil
- 4 Scheiben Whole wheat bread
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Wash and dice the onion, bell pepper, zucchini, and eggplant into small cubes (approx. 1 cm).
- 2. Heat the olive oil in a large pan. Sauté the onion and bell pepper over medium heat for 5 minutes until soft.
- 3. Add the zucchini and eggplant cubes. Sauté everything for another 10 minutes, stirring occasionally.
- 4. Pour in the tomato puree. Season with salt and pepper. Simmer uncovered on low heat for 20 minutes until the liquid has almost evaporated.
- 5. Toast the bread in a toaster or pan. Serve thepisto hot with the toast.
