  1. 1. Wash and dice the onion, bell pepper, zucchini, and eggplant into small cubes (approx. 1 cm).
  2. 2. Heat the olive oil in a large pan. Sauté the onion and bell pepper over medium heat for 5 minutes until soft.
  3. 3. Add the zucchini and eggplant cubes. Sauté everything for another 10 minutes, stirring occasionally.
  4. 4. Pour in the tomato puree. Season with salt and pepper. Simmer uncovered on low heat for 20 minutes until the liquid has almost evaporated.
  5. 5. Toast the bread in a toaster or pan. Serve thepisto hot with the toast.
