- 1 Eggplant
- 1 Bell Pepper
- 2 Tomatoes
- 1 Onion
- 2 Garlic
- 3 EL Olive Oil
- 2 Egg
Instructions
- 1. Dice zucchini, eggplant, and bell pepper.
- 2. Sauté onion and garlic in olive oil.
- 3. Add the vegetables and sauté.
- 4. Add tomatoes and let simmer.
- 5. Top with eggs and let set.
