  1. 1. Preheat the oven to 200 degrees Celsius conventional heat.
  2. 2. Heat the oil in a pan and sauté the onions over medium heat for 3 minutes until translucent.
  3. 3. Remove the pan from the heat and stir the sour cream, half of the cheese, and the chives into the onions.
  4. 4. Carefully fill the bell peppers with the mixture and place them in a baking dish.
  5. 5. Sprinkle the remaining cheese on top of the stuffed peppers.
  6. 6. Lightly salt and pepper the filling.
  7. 7. Bake the peppers in the oven for 15 minutes until the cheese bubbles and turns golden brown.
