🐟 Roasted Pepper Sardine Salad

Ingredients
- 2 Stück Bell peppers (red and yellow)
- 2 Dosen (à 100 g) Sardines in olive oil (drained)
- 200 g Cherry tomatoes
- 1 kleiner Red onion
- 3 EL Olive oil
- 1 EL Lemon juice
- 1 Prise Salt
- 2 EL Fresh cilantro (chopped)
Instructions
- 1. Preheat the oven to 200 °C (390 °F) conventional mode.
- 2. Wash the peppers, remove the stems and seeds, and cut them into large pieces.
- 3. Place the pepper pieces on a baking sheet and bake for 20 minutes until the skin is charred brown.
- 4. Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap. Let them steam for 10 minutes to make the skin easy to peel.
- 5. Roughly chop the peeled peppers into bite-sized strips and place them in a large salad bowl.
- 6. Wash the tomatoes, halve them, and dice the onion finely. Add them to the peppers.
- 7. Open the sardine cans, blot excess oil with a paper towel, and roughly flake the fish into the bowl with a fork.
- 8. Whisk the olive oil with lemon juice and salt. Pour the dressing over the salad and toss everything gently.
- 9. Sprinkle the salad with fresh cilantro and serve immediately.
