  1. 1. Rinse the rice under cold water and drain it.
  2. 2. Cut the bell peppers into large cubes and the onions into thin strips.
  3. 3. Heat the olive oil in a large pot or pan over medium heat.
  4. 4. Fry the onions and peppers for 5 minutes until soft.
  5. 5. Add the garlic, tomato paste, and paprika powder and stir for 1 minute.
  6. 6. Add the rice and saffron threads and stir until the rice is slightly colored.
  7. 7. Deglaze with the vegetable broth and add salt and pepper.
  8. 8. Simmer the paella on low heat for 15 minutes without stirring.
  9. 9. Remove the pot from the heat and let the paella rest for 5 minutes.
  10. 10. Sprinkle the parsley over the dish and serve warm.
