🫑 Pepper Fondue Paella

Ingredients
- 300 g Basmati rice
- 500 g Bell peppers (red and yellow)
- 2 Stück Onions
- 3 Stück Garlic cloves
- 2 EL Tomato paste
- 600 ml Vegetable broth
- 4 EL Olive oil
- 1 TL Sweet paprika powder
- 1 Prise Saffron threads
- 2 EL Parsley (chopped)
- 1 TL Salt
- 1/2 TL Black pepper
Instructions
- 1. Rinse the rice under cold water and drain it.
- 2. Cut the bell peppers into large cubes and the onions into thin strips.
- 3. Heat the olive oil in a large pot or pan over medium heat.
- 4. Fry the onions and peppers for 5 minutes until soft.
- 5. Add the garlic, tomato paste, and paprika powder and stir for 1 minute.
- 6. Add the rice and saffron threads and stir until the rice is slightly colored.
- 7. Deglaze with the vegetable broth and add salt and pepper.
- 8. Simmer the paella on low heat for 15 minutes without stirring.
- 9. Remove the pot from the heat and let the paella rest for 5 minutes.
- 10. Sprinkle the parsley over the dish and serve warm.
