  1. 1. Wash the mushrooms and shallots. Slice the mushrooms and finely chop the shallots.
  2. 2. Heat the olive oil in a non-stick skillet. Sauté the shallots and mushrooms for 5 minutes.
  3. 3. Add the garlic and thyme. Sauté for 1 minute until fragrant.
  4. 4. Whisk the eggs in a separate bowl. Season with salt and pepper.
  5. 5. Pour the egg mixture over the mushrooms in the pan. Reduce heat to low.
  6. 6. Cook the frittata for 8 minutes until the eggs are almost set.
  7. 7. Crumble the goat cheese on top of the frittata. Cover the pan and let it rest for 2 minutes.
