  1. 1. Wash the courgettes and grate them finely using a grater.
  2. 2. Season the grated vegetable with a pinch of salt and let it sit for 10 minutes. Then squeeze out all excess liquid firmly with your hands.
  3. 3. Mix the drained vegetable in a bowl with the eggs, breadcrumbs, and cornstarch to form a firm dough.
  4. 4. Heat the butter in a large frying pan and form the mixture into small, flat fritters. Fry them on each side for 3 minutes until golden brown.
  5. 5. Pour the stock into the pan, remove the fritters, and bring the sauce to a boil.
  6. 6. Whisk in the juice of half the lemon into the sauce. Season with pepper.
  7. 7. Return the fritters to the pan, toss briefly in the sauce, sprinkle with parsley, and serve with the remaining lemon half.
