🍋 Zucchini Piccata Fritters

Ingredients
- 400 g Courgettes (Zucchini)
- 2 Stück Eggs
- 60 g Breadcrumbs
- 30 g Butter
- 200 ml Chicken stock (concentrate)
- 1 Stück Lemon
- 2 EL Fresh parsley
- 1 TL Cornstarch
Instructions
- 1. Wash the courgettes and grate them finely using a grater.
- 2. Season the grated vegetable with a pinch of salt and let it sit for 10 minutes. Then squeeze out all excess liquid firmly with your hands.
- 3. Mix the drained vegetable in a bowl with the eggs, breadcrumbs, and cornstarch to form a firm dough.
- 4. Heat the butter in a large frying pan and form the mixture into small, flat fritters. Fry them on each side for 3 minutes until golden brown.
- 5. Pour the stock into the pan, remove the fritters, and bring the sauce to a boil.
- 6. Whisk in the juice of half the lemon into the sauce. Season with pepper.
- 7. Return the fritters to the pan, toss briefly in the sauce, sprinkle with parsley, and serve with the remaining lemon half.
